When you say "Nurse!" you're probably asking to defer to them in some way, shape, or form.
There's many situations where you'd want to defer to a nurse, like when somebody is seriously hurt and you don't know what to do to help them. Just imagine yourself saying "Nurse!" in order to defer to them for their medical knowledge.
